Traditional process: harvesting of Dasylirion piñas, cooking in a cone-shaped stone oven using mesquite wood, manual milling (sometimes with an axe or a tahona depending on the label), fermentation in wooden tinas (encino) with well water, and double distillation in copper stills. Some bottles for specific expressions include short rests or contact with parts of cooked piña or a brief period in casks.
