Production method

Rhum agricole style production: distillation of pure sugarcane juice (no molasses). The company reports an extended fermentation phase, slow fractional reduction (at least 60 days for some cuvées) and a 'settling' period in stainless steel tanks of at least three months before bottling; aged expressions are blended and matured in selected oak casks and in some cases receive a Port cask finish.

Production is tied to the Habitation La Montagne, on the slopes of the Montagne Pelée; the modern activity of the Depaz brand began with Victor Depaz, who established the current distillation facility in the early 20th century (registered creation date: 8 May 1917). The agricultural origins of the site go back centuries, but the present Maison Rhums Depaz is known for having developed rhum agricole production closely linked to the local terroir.
