Distillation and production

Distillation and production

Production method

Production of single malt according to single malt Scotch practice: use of malted barley, mashing, fermentation and distillation in very tall copper pot stills to obtain a light new make; subsequent maturation in oak casks and frequent use of wine-cask finishing for specific expressions.

Distillation

Very tall copper pot stills; batch distillation process typical of Scottish single malts.

Ageing

Maturation in oak casks (American white oak ex-bourbon) with frequent finishing in casks that previously held wines or other spirits (sherry, port, Sauternes, Madeira, etc.) or in special woods; use of ex-bourbon casks for the core maturation and second-fill/finish casks for specific expressions.

Producer history Glenmorangie

Founded on the Morangie site (Tain, Easter Ross) in 1843 by William Matheson, Glenmorangie grew to become one of the best-known Highland single malts. During the 20th century ownership passed through several hands; in 2004 the group was acquired by the wines and spirits division of LVMH. Over time the distillery has stood out for its extremely tall stills and for innovation in wine-cask finishing.

Production philosophy

A pursuit of delicacy and aromatic complexity through choices of still design, control of raw materials and experimentation with maturation in different cask types. Emphasizes connection to the local area and the sustainability of local water resources.

Territory

Tain, Easter Ross (Highlands), on the shores of the Dornoch Firth, Scotland.

Awards and recognitions

IWSC – Distiller of the Year (2012); numerous 'Gold Best in Class' awards at the International Wine & Spirit Competition.
