Distillation and production

Production method

Production based on cane juice and syrup from the Cristalline variety harvested locally; separate fermentations (juice and syrup) with selected yeasts and, in some cuvées, the addition of vinasse/dunder. Two‑step distillation in a Müller pot still (first and second run), with reduction to the bottling strength specific to each expression.

Distillation

Double discontinuous distillation (pot still) using a Müller still; first run at lower strength and second run at higher strength, followed by reduction to bottling strength.

Ageing

For aged expressions: maturation in used and new barrels depending on the cuvée; documented procedures include ageing in ex‑Caroni, ex‑cognac, ex‑whisky casks and in 'ex‑Providence' / Providence casks (new American oak with char/charge cycles and filling/emptying cycles to acclimatize the wood).

Producer history Providence

The Providence project was born from the collaboration between the Linge family (linked to Haiti's rum tradition) and La Maison & Velier. The distillery was built in 2018 in Port‑au‑Prince and the first commercial distillations began in early 2019. The plant was conceived to recover and valorize local practices and cane varieties such as 'Cristalline', with the aim of producing both unaged rums and barrel‑aged expressions.

Production philosophy

Combining local raw materials (organic cane) with technical know‑how: controlled fermentations with selected yeasts, use of fermentation/distillation residues (vinasse/dunder) where appropriate, and careful attention to distillation and aging to express the characteristics of the Haitian terroir.
