Production method
Seasonal cane harvest, extraction of fresh juice (vésou), fermentation in stainless steel tanks and distillation in a Creole steam column; the distillate is then processed for the different expressions (white, amber, aged) and partly finished in barrels.
Distillation
Distillation in a Creole steam column from vésou; raw distillates typically between 65% and 75% ABV before any reductions for bottling.
Ageing
Finishing in barrels with blends of vintages for the aged expressions; some cuvées and XOs feature extended aging and selected finishes in particular casks (e.g. casks that previously held cognac / French oak) according to product notes and specialized press.
Producer history Trois Rivières
The estate was established as a habitation/estate in 1660 in southern Martinique (Sainte-Luce) and has a long tradition linked to sugarcane cultivation and rhum production. In the 20th century production shifted towards rhum agricole (pur jus de canne). In recent years the brand has been managed alongside other local houses and commercial production has been rationalized, with some processes assigned to the island's historic production sites. Since 1996 the products fall under the Appellation d'Origine Contrôlée Rhum de la Martinique.
