Distillation and production

Distillation and production

Production method

A mix of infusions and distillations of botanicals; for some products (e.g. Kaiserfost) infusion followed by distillation is practiced, while Tovel's Gin is produced with the vapor infusion method. Finishing and aging in wood are also performed for some labels such as amari, vermouth and brandy.

Distillation

Infusion and distillation of botanicals; for Tovel's Gin the vapor infusion technique is used (alcoholic vapor infusion in the historic still).

Ageing

Finishing and aging in wooden casks and barriques; some products (e.g. Kaiserfost) are finished in French oak barriques previously used for brandy; the S. Romedio vermouth is aged in casks formerly used for brandy.

Producer history Valentini

Origins are documented on the company website: production began in 1872 with Von Damian Valentini in Val di Non. In the following decades the family expanded the business (Tassullo, later moving to Cles) and in the 20th century stills for alcohol, brandy and grappa were introduced. After a crisis in the 1990s, the brand was revitalised in the new millennium with a restyling and reorganization led by Gianluigi Valentini; recent milestones include the launch of Tovel's Gin (2012), the Alchemie line and the S. Romedio vermouth (2015), and the opening of a new bottling and logistics plant in Salorno (2018).

Production philosophy

Small-scale artisanal production, predominant use of natural ingredients and local botanicals, attention to the connection with the Trentino territory and to the quality of raw materials; positioned in premium and niche segments.

Territory

Val di Non (Trentino) with production sites in the province of Trento and bottling facilities in Salorno (BZ); produced and inspired by the Dolomites/Adamello Brenta area.
