A pleasant wine of excellent drinkability, made with 100% Croatina grapes grown in the Oltrepò, on clayey-calcareous soil. The low yields, the manual harvest at the end of September/beginning of October and the 4-day maceration make it a wine of rare frankness and perfect correspondence with the varietal.
The grapes are harvested and taken to the cellar, where destemming and crushing are carried out. After 4 days of contact with the skins, fermentation follows in stainless steel tanks at a controlled temperature of 25ºC. For better conservation, a second fermentation of the residual sugars is carried out in an autoclave at a controlled temperature (16-18°C).
In the glass it shows a crimson red color with violet hues; the nose is decisive and vigorous, centered on floral and fruity scents of violets and cherries, wild berries and blackberries. On the palate it is dry, fragrant, lively and juicy.
A wine that goes well with meat first courses such as risotto with sausage, appetizers of cured meats and medium-aged cheeses.
