Torrevento's Castel del Monte DOC "Bolonero" is a wine that embodies the essence of the Castel del Monte territory, renowned for its history, its landscape and, of course, its distinctive wines. Located in the heart of the Alta Murgia National Park, the Torrevento winery is deeply rooted in the winemaking tradition of the region, devoting great attention to the production of wines that reflect the uniqueness and quality of the Apulian terroir.

"Bolonero" is a blend of native grapes, mainly Nero di Troia and Aglianico, which adapt perfectly to the climatic conditions and calcareous soil of the Castel del Monte area, giving life to wines of great structure, elegance and aging capacity. Torrevento's philosophy aims to enhance these varieties through sustainable practices in the vineyard and vinification that enhances the purity of the fruit and the typicality of the blend.

The vinification of "Bolonero" involves fermentation at a controlled temperature, followed by a period of refinement in steel and then in the bottle, to preserve the freshness and varietal aromas of the grapes, while guaranteeing good complexity and structure to the final wine.

Visually, "Bolonero" has a deep ruby red color, with violet reflections that highlight its youth and vitality. On the nose, the wine offers a rich and complex bouquet, where notes of ripe red fruits, such as plums and cherries, dominate, enriched with spicy and balsamic nuances, which reflect the influence of the Nero di Troia and Aglianico grapes.

In the mouth, "Bolonero" is characterized by a solid structure and well-integrated tannins, with a perfect balance between fruity richness and lively acidity which guarantees freshness and drinkability. Red fruit flavors blend with delicate spice accents and a light mineral note, leading to a long and satisfying finish.

Ideal in combination with robust dishes of traditional Apulian cuisine, red meats, game and mature cheeses, Torrevento's Castel del Monte DOC "Bolonero" is an excellent choice for those looking for a wine that represents the richness and authenticity of the Castel terroir del Monte, offering an intense and pleasantly complex tasting experience.
