The Trento Brut DOC "Om De Fer" produced by Dorigati winery is a magnificent expression of elegance and refinement, reflecting the winemaking tradition of Trentino. This sparkling wine is made following the traditional method, which involves a second fermentation in the bottle, giving the wine distinctive complexity and a creamy texture.

The blend is mainly composed of Chardonnay grapes, with a small addition of Pinot Nero, which together create a perfect balance between vivacity and structure. On the nose, the Trento Brut DOC "Om De Fer" presents an intriguing bouquet of fresh fruit, such as green apple and citrus, with hints of toasted bread and yeast from the long sur lie aging.

On the palate, it is distinguished by its freshness and lively acidity, which balance harmoniously with creamy notes and a fine, persistent perlage. The aromatic persistence is long and elegant, leaving a pleasantly fresh and clean sensation on the palate.

Ideal as an aperitif, this sparkling wine pairs beautifully with light appetizers, fish-based dishes, or seafood. Its elegance also makes it suitable for accompanying special moments and celebrations. The Trento Brut DOC "Om De Fer" by Dorigati is not just a wine, but a taste experience that elevates every occasion.

Winery history
The Dorigati family has been active in Mezzocorona for generations: the company traces its origins to 1858 and developed as a family-run business dedicated to viticulture in the Piana Rotaliana. The current premises at Via Dante 5 date back to the early 20th century, with later extensions and a winery renovation completed in 1998. In the 1980s the winery also launched the Methius project, a Trento DOC Metodo Classico reserve.
Production philosophy
The winery focuses on territorial identity and quality: traditional viticultural practices, cluster selection and winemaking designed to bring out the character of the individual vineyards of the Piana Rotaliana and the pedemontane hills. It produces both 'classic' wines tied to the territory and Metodo Classico sparkling wines, with attention to artisanal process management.
Terroir and vineyards
The vineyards are concentrated in the Piana Rotaliana and on the foothill slopes of Mezzocorona, with some plots associated with specific crus, such as the 'Bagolari' vineyard. Some Traditional Method cuvées come from hilly areas such as Faedo and Pressano; the soils include fluvial and glacial deposits typical of the area.
