Production method

According to sources, production is based on raw materials tied to the local sugar supply chain: the molasses/semi-finished products from the agricultural group are selected for fermentation. Distillation takes place in modern facilities using a continuous column process; the distillates are then aged in casks and blended by the master blender.

Aging mainly in American oak ex-bourbon casks; some expressions receive finishes or additional aging in specific casks (e.g. Ceiba Maya for Xaman, finishes in oloroso or cognac casks for some selections). One release (Artesano) also includes an infusion with local pineapple for a limited period.

Producer history Cihuatán

Licorera Cihuatán was established in the early 2000s and is commonly cited as the first operational rum production facility in El Salvador. The project is linked to the agricultural/sugar production group Ingenio La Cabaña; the brand's first international commercial releases date to the mid-2010s. Over time the range expanded with aged expressions (8, 12, 16 years and special bottlings).

The brand emphasizes local roots and Mayan culture: names, stories and packaging recall regional myths and symbols. The official website highlights control of production "from seed to bottle" and a focus on craftsmanship and the quality of aged expressions.
