Stauning

Stauning is a Danish distillery specializing in barley- and rye-based whiskies made from locally grown cereals. Founded by the original partners in 2005, it is known for floor malting, flame‑heated copper column stills and a 'grain-to-glass' approach that blends tradition and experimentation.

Official website
The story
Born as a project of nine friends in 2005 in an old slaughterhouse in the village of Stauning (West Coast of Denmark), commercial production began in 2011. To meet growing demand, a purpose-built modern distillery was opened near the original site in 2018 while retaining artisanal practices such as floor malting and direct-fire distillation.
Production philosophy
Local, traceable production: use cereals grown within a few kilometres of the site, recover traditional techniques (floor malting, direct fire) and experiment with finishes in different casks to express the territorial character of the Danish West Coast.
Territory
Village of Stauning, West Jutland (West Coast), Denmark. Operational address: Stauningvej 38, 6900 Skjern.
Production method
Floor malting, relatively long fermentation (about 4 days), double distillation in small flame‑heated copper pot stills, predominant use of local barley and rye; maturation in wooden casks with experiments on different cask finishes.
Distillation
Double distillation in small flame‑heated copper pot stills, keeping shapes and sizes that replicate the artisanal style of the original production.
Ageing
Maturation in oak casks with primary use of ex-bourbon and virgin American oak; experiments and finishes in ex-mezcal, ex-cognac, ex-calvados casks and casks used for vermouth and other liquids.
