On the palate the sip confirms the freshness: it is dry, well-structured, with a texture that emphasizes sapidity more than sweetness, and virtually no tannins, as typical of the spirit. The persistence centers on citric notes and an herbaceous return that invites another taste. It works well in classic gin-based cocktails as well as in more essential mixes, and pairs with fish appetizers, crudos and aromatic preparations. Serve chilled, preferably with simple ingredients that let the gin speak.
