An Irish single pot still from Teeling that puts the working of the wood front and center: maturation in virgin Swedish oak casks gives a clear, decisive aromatic profile without being overpowering. On the nose there are white-fleshed fruits and citrus peel, accents of honey and fresh butter, then vanilla and a toasted note reminiscent of biscuit and light coconut. The new wood provides gentle tannin and sweet spices, while the sip remains harmonious, with good structure and restrained warmth that invites the next mouthful.

On the palate it is round and enveloping, with an oily texture that supports flavors of salted caramel, vanilla and a subtle heat of white pepper; the wood is present but controlled, offering persistence and a pleasant dry finish. Best served at room temperature or slightly cool, ideal in a tumbler or snifter, and pairs well with dark chocolate, aged cheeses or as a contemplative after-dinner dram for those who enjoy the dialogue between fruit and wood.
