The story
The brand was founded by Jacques Bally, who in the early decades of the 20th century transformed the Habitation Lajus in Le Carbet (Martinique) into a producer of rhum agricole. From the first half of the century J.Bally became known for the use of barrel aging and for the iconic pyramid bottle designed in the 1930s. By the end of the 20th century production at the original site was reduced or ceased and J.Bally labels were subsequently produced and managed by other distilling facilities on the island; the brand survived through aged releases and vintage bottlings marketed internationally.
Production philosophy
To showcase Martinican rhum agricole through controlled aging and vintage releases, with attention to visual identity (pyramid bottle) and the selection of cuvées for aging.
Territory
Le Carbet, Martinique (French Caribbean); modern production is linked to production/distillation at other sites on the island.
Production method
Production in the rhum agricole style: distillation from fresh sugarcane juice and established practice of aging in casks. Historically J.Bally employed a creole column for distillation.
Distillation
Creole column / continuous column (rhum agricole style) - historical use of a creole column
Ageing
Aging in wooden (oak) casks for the 'vieux' expressions and vintage releases
