Winery history Domaine Pillot (Romain & Simon)

The Pillot family has been established in the Côte Chalonnaise for several generations: the company's website records six generations of winegrowers and viticultural activity on these hills for around 150 years. Bottles have been marketed since the 1960s, and the winery, with parts dating to the 18th century, was renovated in the 1990s. Romain and Simon are listed as the current managers, who officially took the reins of the estate in 2024.

Production philosophy

The estate highlights the passing down of family knowledge, a traditional winemaking approach, and meticulous vineyard care to express the character of Mercurey's terroirs. Traditional practices are combined with modern equipment and careful attention to the quality of the vineyard parcels.

Terroir and vineyards

Vineyards located in the Mercurey area in the Côte Chalonnaise, with parcels in crus such as 'Clos des Montaigus' and 'En Sazenay', and vineyards facing southeast on the area's typical clay-limestone soils.
