Production method

For the Akashi single malt line vatting (blending) is practiced using whiskies matured in Sherry and Bourbon casks; some references are bottled without chill-filtration and without added colour. The range comprises both blends (formulated to be enjoyed on the rocks or with soda) and single malts with selected maturations.

Ageing

Maturation in casks (including Sherry cask and Bourbon cask) and subsequent vatting for some expressions; some releases use finishing in particular casks (e.g. mizunara in selected releases). Some bottles are bottled without chill-filtration and without added colouring.

Producer history Akashi

The Akashi brand is developed by Eigashima Shuzo Co., Ltd., a company with roots in sake and spirits production. Eigashima was founded in 1888; the company obtained a licence to produce whisky as early as 1919 and built a new facility dedicated to whisky in 1984 (also known as White Oak Distillery). Under the Akashi label both blended whiskies and single malts are offered, along with variants and gift packs.

Production philosophy

The company states a philosophy based on "sincerity" and artisanal heritage; Akashi whiskies emphasize careful maturation and a desire to deliver the original flavour of the product (some expressions are bottled without chill-filtration and without added colouring).

Territory

Headquarters and production in Akashi City, Hyōgo Prefecture (Japan), on the coast of the Seto Inland Sea; the White Oak (Eigashima) distillery is located in the same coastal area.
