Distillation and production

Distillation and production

Production method

Traditional batch distillation in small copper pot stills using direct steam (battery system) at low pressure and slow rhythms; some types are distilled in a bain-marie. Distillates are generally rested for one year in stainless-steel tanks before any subsequent wood aging.

Distillation

Batch distillation with direct steam in small copper pot stills (battery system) at low pressure and a very slow pace; some types are distilled in a bain-marie.

Ageing

Initial refinement in stainless-steel tanks (around 1 year) followed, for aged typologies, by rest and maturation in wood (oak casks) with variable periods: minimum 2–3 years for some aged expressions and reserves that can exceed 20–30 years.

Producer history Bosso

The Bosso family's production dates back to the 19th century: origins trace to 1888 when distilling activity began in the Lower Monferrato area. Over the years production moved definitively to Cunico (province of Asti) and management passed down through generations; the family developed both single-varietal grappas and wood-aged vintage reserves, consolidating its presence on domestic and international markets.

Production philosophy

Strong roots in family tradition and focus on the quality of the grape pomace: Bosso emphasizes the enhancement of Piedmontese grape varieties, varietal expression in single-varietal grappas and the use of aging and blending to create balanced reserves.

Territory

Monferrato (Piedmont). For varietal grappas typical zones are cited for the grapes used, such as Santo Stefano Belbo and Canelli for Moscato and the Caluso area for Erbaluce. Operational headquarters: Cunico (AT).
