Distillation and production

Distillation and production

Production method

Castagner uses a combination of continuous and discontinuous distillation plants. It has developed proprietary procedures for pomace treatment (e.g. 'Buccia Pura') and controlled fermentation management systems ('Grappasystem'). Stages include immediate reception of the pomace, distillation, stabilization in stainless steel, possible aging in barrique and automated bottling with strict quality controls.

Distillation

Continuous and discontinuous plants; use of proprietary methods for pomace treatment ('Buccia Pura') and controlled fermentation management ('Grappasystem').

Ageing

Aging in barrique with maturation ranging from at least 12 months up to more than 20 years; part of the production matures in small cherry and oak barrels in the dedicated cellar.

Producer history Castagner

The company history of Castagner begins in 1996 when Roberto Castagner founded the distillery bearing his name. Over the years the company has grown, developing dedicated lines (including Fuoriclasse Leon, Le Torbe, Mixology and Agadeìta) and investing in a large barrique cellar for aging. Management has remained family-run with the involvement of the second generation.

Production philosophy

The production approach blends the search for aromatic elegance and smoothness with innovation: focus on raw material quality, technological control of processes and enhancement of the Prosecco Conegliano-Valdobbiadene territory.

Territory

Production site on the hills of the Prosecco Conegliano-Valdobbiadene area, in the province of Treviso (Visnà di Vazzola), a zone historically suited to viticulture and the production of Venetian grappa.
