Distillation and production

Production method

Production based on cane juice from the estate; distillation mainly in Barbet-type copper columns for the main rums, with special batches distilled in small copper pot stills. Liqueurs are produced by slow maceration/maturation (minimum 3 months) of natural ingredients in the company's premium rums.

Ageing

Aging in oak casks (French and American); some expressions undergo double maturation / cask finish (ex-bourbon, ex-Pedro Ximénez, ex-Sauternes). Some spiced rums are infused/matured in oak casks for a period indicated by the house.

The Domaine de l'Exil in Chamarel entered the owning family in 1996; the facility for rum production was designed and built later with the aim of producing rum from cane juice grown on site. La Rhumerie de Chamarel is today known for its rhum agricoles, aged bottlings and a line of rum-based liqueurs.
