The story
Hatozaki is a recent brand developed within Akashi's production ecosystem (Hyōgo) and takes its name from the historic Hatozaki lighthouse near the port of Akashi. Hatozaki releases were launched as a line of blended and blended-malt whiskies designed for modern consumption, with some aged expressions and specific finishes (e.g. Umeshu cask).
Production philosophy
Working Japanese tradition with modern techniques: carefully blended productions by a master blender/distiller to create whiskies suitable both for Highball service and for tasting, privileging naturalness (no added coloring, non-chill filtered).

Production method
Hatozaki expressions are produced via a two-stage blending procedure: selection of base malts and whiskies, assembly and subsequent finishing in selected casks (cask-finishing). Bottles are non-chill filtered and contain no added colorants.
Distillation
Distillation using pot stills (the craft facilities of Kaikyō Distillery); the brand is primarily based on blending and cask-finishing.
Ageing
Aging and finishing in various types of casks (ex-bourbon, ex-sherry) with umeshu cask finishes; some expressions are indicated up to 12 years.
