Distillation and production

Production method

Uses a rice-based spirit and water from the Fushimi area. Botanicals are classified into six groups (Base, Citrus, Tea, Herbal, Spice, Fruity & Floral); each group is distilled separately and the final distillates are then blended and balanced.

Distillation

Batch pot still distillation; botanicals are separated into six elements and distilled individually before the final blending. The facility is equipped with large-capacity pot stills for main production and smaller units for experimental batches.

Producer history Ki No Bi

The Ki No Bi brand was launched in 2016 as an expression of The Kyoto Distillery, a company founded by partners Noriko Kakuda Croll, David Croll and Marcin Miller. The Kyoto Distillery was established in 2014 and after more than two years of experimentation Ki No Bi Kyoto Dry Gin was officially introduced in October 2016. The project aims to showcase Kyoto's local botanicals and craftsmanship.

Production philosophy

A pursuit of balance between traditional botanicals and local Kyoto ingredients; attention to seasonality and collaboration with local artisans for packaging and presentation. The name evokes the idea of the 'beauty of the seasons' and a strong connection to the local territory.
