Production method
Small-batch production: long fermentations (around 3–5 days) to develop fruity notes; distillation in copper pot stills designed to produce a lighter spirit; a high alcohol cut point. The company states the practice of marrying new-make batches to selected casks for maturation.

The distillery was initiated as a local project in the Kingsbarns area (Fife) and the operational facility was opened in 2014; the first cask fillings took place in 2015. The project is associated with the Wemyss family (Wemyss Malts) and, after an initial launch with expressions such as "Dream to Dram", the range was expanded to include Balcomie and the current flagship Doocot.

To create Lowland-style single malts that are light and fruity, using local raw materials (Fife barley, local water) and careful cask selection; an artisanal approach with attention to sustainability and integration with the local area.
