Distillation and production

Production method

Base spirit made from 100% malted barley; distillation in copper pot stills. For gin the same malt-base is used and selected botanicals are added; ageing and finishes take place in various cask types and across different maturation sites in Israel.

Distillation

Copper pot still distillation; for gin multiple pot still distillations and infusions/steeps of botanicals are used.

Ageing

Finishing in various casks with experimental finishes; accelerated maturation leveraging Israel's Mediterranean climate and, for some expressions, specific conditions in areas such as the Dead Sea region.

Producer history M&H Distillery

Founded in 2013, M&H (Milk & Honey) established itself as the first whisky distillery in Israel. Over the years it developed several series (Classic, Elements, Apex, Art&Craft and Gin Series) and has received international recognition, including the World's Best Single Malt title (World Whiskies Awards 2023) for the Elements Sherry Cask.

Production philosophy

Combines traditional single malt production techniques with a creative, experimental New World approach: small-batch production, cask experimentation and finishing interventions that highlight the local climate and terroir.
