Distillation and production

Production method

Production of single malt according to the traditional Scottish method: fermentation and distillation on historic stills integrated by the particular partial distillation regime (attributed the value "2.81"), with condensation via worm tubs. Maturations are carried out in different types of casks, selected according to the desired final expression.

Distillation

Traditional procedure with a "partial-triple" distillation regime producing a new make commonly described as distillate 2.81; use of worm tubs for condensation, which impart structure and salinity to the spirit.

Ageing

Maturations in various types of casks depending on the expression: refill and first-fill casks are used, with extensive use of sherry casks for some references; certain special releases are finished in French oak or other selected woods/finishings.

Producer history Mortlach

Mortlach was established as the first licensed distillery in Dufftown following early 19th-century excise reforms. The site was officially founded around 1823 and developed through the 19th century by the Cowie family: in particular Alexander Cowie is credited with refining the original distillation regime that still characterises the brand. Over time Mortlach has also been used in major blends and, under its current ownership/management, has been relaunched on the single malt market with an official range of bottlings and premium releases.

The production philosophy favours tradition and intensity: preserving historic techniques (such as worm tubs and the particular distillation cycle) to achieve a full-bodied, complex spirit that responds well to maturation in characterful casks.
