The story
The Opthimus label is part of the Oliver & Oliver portfolio (sometimes cited as Oliver y Oliver), a company of Cuban origin now operating in the Dominican Republic. Oliver & Oliver mainly acts as a selector, blender and bottler of rums sourced from various distilleries in Central and South America/the Caribbean; the Opthimus brand is registered with the competent offices in the Dominican Republic.
Production philosophy
Select quality distillates from the Caribbean region and enhance them through Solera aging and targeted finishing in specific casks to produce smooth, rich expressions suited to tasting.
Territory
Produced and marketed by Oliver & Oliver's operational facility in the Dominican Republic; raw materials/distillates are also selected from distilleries in Panama, Guatemala, Nicaragua, Trinidad and the Dominican Republic.
Production method
Opthimus uses third-party sourced distillates from various regional distilleries; these distillates are blended, aged using the Solera system in Oliver & Oliver's cellars and, for some expressions, subjected to a finishing period in selected barrels.
Distillation
Sourced products: distillates purchased from third parties (not always distilled in-house); sources indicate the prevalent use of continuous/column distillation on the molasses-based base distillates.
