Production method

Production varies by category: vermouths and aromatized wines are made by blending base wines, sugar, alcohol and botanical extracts/infusions; liqueurs such as sambuca use selected raw materials (e.g. star anise) and employ distillation or infusion processes depending on the product. The company operates dedicated bottling lines (vermouth/aromatized, sparkling wines, niche productions).

Distillation

Various depending on the product: vermouths are obtained by infusion of botanical extracts in wine; for some liqueurs (e.g. Sambuca Optima) steam distillation is used.

Ageing

Wines and some fortified wines undergo ageing in wooden casks and barriques; some products (e.g. Cremovo) undergo a short period of cask ageing.

Producer history Perlino

Founded in 1905 in Castello d'Annone (province of Asti) by Giuseppe Perlino, the company grew from trading Asti wines to starting, in the 1930s, production of sparkling wines and vermouth, which became the company's focus. In the 1990s a second production site was established in Montiglio Monferrato with cellars for wood ageing. Today Perlino continues its international expansion while maintaining the family tradition.
