Distillation and production

Distillation and production

Production method

Production based on 100% malted cereals. Milling and mashing followed by long fermentations (up to 96 hours) in wooden washbacks; distillation in traditional copper pot stills with temperature control via heated water; maturation in various types of casks in dunnage warehouses.

Distillation

Batch distillation in copper pot stills; heating via superheated water for precise temperature control; production of 100% malt whisky.

Ageing

Maturation in various cask types (minimum 3 years for whisky expressions), in warehouses with alpine temperature excursions that accelerate alcohol-wood interaction.

Producer history PUNI

PUNI Distillery was founded by the Ebensperger family in 2010 in Val Venosta, near the town of Glorenza. After two years of construction the distillery produced its first spirit in February 2012; the first bottles (including NOVA and ALBA) were released to the market in 2015. The distillery takes its name from the Puni river that runs through the valley.
