Distillation and production

Distillation and production

Production method

Range of methods: pot still distillation for single pot still expressions and column stills for some grain whiskey; experimentation with triple distillation on select bottles; extensive use of finishes and double maturation in different casks; frequent bottling without chill filtration and with a characteristic house ABV.

Distillation

Combined use of pot stills (for single pot still expressions) and column stills (for some grain whiskey); some expressions are triple distilled; method varies depending on the bottle.

Ageing

Maturation in a wide range of casks with frequent finishes and double maturations (e.g. bourbon followed by wine casks such as Sauternes, red wine casks; finish in Japanese shochu casks on some releases). Many bottles are bottled without chill filtration and are reduced from cask strength to their house 'signature' ABV.

Producer history Teeling

The Teeling family has been connected to whiskey production in Dublin since the 18th century. Jack and Stephen Teeling relaunched the brand from 2012 and, using matured stocks, opened the Teeling Whiskey Distillery at Newmarket Square in the Liberties in 2015 (the first new distillery in the city in over 125 years). In recent years the group has attracted external investment: Bacardi increased its stake in the company, acquiring a majority position in late 2023/early 2024.

Production philosophy

Combine tradition and innovation: experiment with atypical mash bills and unconventional maturations to expand the whiskey's aromatic profile; preserve body and character by avoiding chill filtration on many releases and maintaining a robust organoleptic profile by bringing distillates from cask strength down to their house 'signature' ABV.
