The Cairn is a modern distillery located in the Cairngorms National Park (Grantown-on-Spey, Scotland), owned by the historic company Gordon & MacPhail. It launched the CRN57° range of blended malts that anticipates the aromatic profiles of the single malts that will mature at the distillery in the future.

The story
The Cairn is the distillation project developed by Gordon & MacPhail, a fourth-generation family company known for selecting and maturing whisky. The facility opened in 2022 near Grantown-on-Spey in the Cairngorms National Park; the initiative was born from the group's intention to complete the production cycle by transforming decades of experience in cask selection and maturation into its own spirits production.

Production method
Production of malt whisky with a full-lauter mash tun, fermentation in stainless-steel washbacks and distillation on a multi-still plant (number of stills: 6). Shell-and-tube condensers are used; production parameters are designed for spirits intended for long maturation.
Distillation
Pot stills (6) with shell-and-tube condensers; full-lauter mash tun and stainless-steel washbacks; process calibrated to produce new make intended for long maturation.
Ageing
Extended maturation in selected casks; the CRN57° range was created using Gordon & MacPhail's stock of matured casks and aims to express profiles obtained from long aging (including finishing in sherry cask).
