Production method

Production of single malt using traditionally shaped and sized copper pot stills (the so‑called 'Curiously Small Stills'), rigorous control of maturation in oak casks and careful selection of yields and cuts from the distillates to achieve the desired character.

Ageing

Maturation in oak casks with heavy use of sherry‑seasoned casks (Jerez, often Oloroso); combined use of European and American oak and of ex‑bourbon casks. Many casks are seasoned with Oloroso in Jerez before arriving in Scotland.

Producer history The Macallan

The Macallan was officially licensed to distil by Alexander Reid in 1824; the company developed on the Easter Elchies Estate in Craigellachie (Speyside). Over the 20th century production and the brand evolved and eventually became part of the Edrington group. In 2018 a new headquarters/distillery and visitor centre designed by Rogers Stirk Harbour + Partners was opened, intended to preserve the historical character while increasing production capacity.
