Distillation and production

Distillation and production

Production method

Traditional single malt production: mashing and fermentation in modernized but traditionally inspired equipment (mash tun, wooden washbacks), relatively long fermentations and batch distillation in traditional pot stills. The distillery also operates a dedicated still/line for producing gin in small batches.

Distillation

Traditional batch distillation in pot stills for the whisky; gin distilled in a dedicated still in small batches. The distillery has upgraded its stills and has equipment for both peated and unpeated production.

Ageing

Maturation in oak casks; core expressions are matured in ex-bourbon / American oak casks and bottled without added coloring and non chill-filtered.

Producer history Tobermory

The distillery is based in the town of Tobermory on the Isle of Mull and traces its origins to 1798. Over the centuries it experienced closures and relaunches, with recent refurbishments and modernization of the facilities. It is the only historic distillery active on the island and maintains small-batch production aimed at expressing the maritime character of the area.

Production philosophy

To highlight the island identity of Mull: products aim to reflect the coastal influence (salty air, local flora) using local water, artisanal small-batch practices and a clear line that separates a fruity, unpeated style (Tobermory) from a smoky, peated one (Ledaig). Core range bottles are presented without added color and are non chill-filtered.

Territory

Isle of Mull, Argyll and Bute (Inner Hebrides), Scotland. The maritime influence and local water (Gearr Abhainn) are defining elements.
