Production method

According to product sheets and reviews, Vecindad cuvées are produced using artisanal methods: piñas are cooked in traditional ovens (including pit or masonry ovens), fermentation is often spontaneous in wooden vats, and distillation is mainly double distillation in copper stills; in some cases traditional stills or containers in wood or ceramic are used.
