Production method

Organic sugarcane milled on a three-roller mill, fermentation with local yeast (Saccharomyces cerevisiae), small-batch distillation (750 L still), collection of only the 'coração' (heart) of the distillation, dilution with local deionized water, resting in stainless steel vats and blending with portions of cachaça aged in European oak barrels, multiple filtration for polishing.

Distillation

Distillation in a 750 L pot still, single pass, collection of only the 'coração' (heart) fraction with an off-still yield around 48%.

Ageing

Resting for about 10 months in stainless steel vats and blending with cachaça aged 5–6 years in European oak barrels.
