UvaViva Italiana di Poli presents itself as an elegant and immediate grape distillate, characterized by a clean and pleasant aromatic profile. On the nose it opens with scents of white-fleshed fruit and wildflowers, with citrus hints and a light almond note that shapes the olfactory texture without weighing it down. The structure is agile yet present, suited to those who seek finesse rather than breadth. Its aromatic clarity makes it approachable while at the same time interesting in its nuances.
On the palate it fulfills that promise: the sip is frank, with good roundness and a tension that supports its progression, leaving a pleasant, dry persistence. The sensation is balanced, with controlled warmth and a discernible clean finish; it lends itself both to contemplative end-of-meal sipping and to small pairings with dark chocolate or blue cheeses. Its versatility makes it suitable for a meditative tasting or for a small glass shared after dinner. Recommended to serve in a narrow glass, at room temperature or slightly cool, to fully appreciate its delicate variations.

The story
Poli Distillerie was founded in 1898 in Schiavon (Vicenza) when Giobatta Poli began distilling. The company has remained family-run for generations and developed a dual focus: artisanal production of spirits and the promotion of grappa culture through the Poli Grappa Museum, with sites in Bassano del Grappa and Schiavon. Over time the range was expanded to include gin, whisky, liqueurs and vermouth while preserving traditional methods alongside production innovations.
Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
Raw materials
- vinacce (pomace) for grappa
- grapes for wine distillates/brandy
- malted barley for whisky
- juniper berries and botanicals for gin
- medicinal plants, herbs and flowers for amari and liqueurs
