Bonollo (Distillerie Bonollo Umberto S.p.A.) is an Italian family-rooted producer of spirits, known for its grappas, amari and a range of liqueurs and gin. It develops identity-driven collections such as OF and Ligneum and has its operational base in the province of Padua.
The Bonollo family's involvement in distillation is documented from 1908. During the twentieth century the company grew while remaining family-run, expanding production sites and acquiring historic local brands. In recent years it has launched lines such as OF (including Grappa OF Amarone Barrique) and the Ligneum collection of reserves aged in tonneaux.
Production philosophy
To enhance wine-growing raw materials and combine tradition with innovation: Bonollo promotes circular economy practices in by-product management, carefully oversees the ageing of its eaux-de-vie and develops high-end products inspired by its century-long experience.
Territory
Headquarters and operations in the Veneto (Province of Padua). Production is also linked to specific sourcing areas, for example the pomace of Amarone from Valpolicella used for some grappas.
Production method
Sistema Unico Bonollo (S.U.B.) that governs the stages from pomace collection to distillation and ageing. For grappas a discontinuous pot still is used; some references are matured in barrique and tonneaux.
Distillation
Distillation in discontinuous pot still for grappas; integrated management through the Sistema Unico Bonollo (S.U.B.).
Ageing
Ageing in French oak barrique and in tonneaux for reserves and some aged grappas.
