The name "Sendrée" comes from a plot whose vines were devastated by the fire of 1838 and which was mistakenly transcribed as "Cendrée", meaning ash. This name commemorates the rebirth of the vineyard from the ashes, symbolizing resilience and regeneration.

This champagne is predominantly made from Pinot Noir grapes, with a touch of Chardonnay, following traditional winemaking methods. Fermentation takes place in oak barrels, which contributes to giving the wine a complex structure and subtly spiced nuances. After bottling, the champagne matures for an extended period on the yeast in the cellar, refining its aromatic complexity and creaminess.
