The Etna DOC Bianco "Mofete" by Palmento Costanzo is an exaltation of the Carricante vine, with the addition of Catarratto, two native Sicilian grapes which find an ideal terroir on the slopes of Etna to express complexity, minerality and freshness. This wine is a tribute to the uniqueness of the Etna volcano, not only for its impact on the landscape and agriculture, but also for its influence on the wines produced there.

Palmento Costanzo is committed to producing wines that reflect the richness and variety of the Etna terroir, using sustainable agricultural practices and a respectful approach towards nature and the landscape. "Mofete" derives its name from the geothermal phenomena associated with the volcanic activity of Etna, a reference to the strength and energy that characterize this territory.

The vinification of "Mofete" aims to preserve the freshness and aroma of the grapes, with controlled temperature fermentation in stainless steel tanks, followed by a short period of aging on the yeasts to enrich the wine with further nuances without overloading the aromas natural.

Visually, the "Mofete" presents itself with a bright straw yellow color, which anticipates its freshness. On the nose, the wine offers an intense and aromatic bouquet, with notes of white pulp fruit, citrus, wild flowers and a distinctive mineral accent reminiscent of flint and salt, testimony to its volcanic origin.

In the mouth, the Etna DOC Bianco "Mofete" by Palmento Costanzo is lively and well balanced, with a crisp acidity that supports a rich variety of flavors, from fruity to mineral ones, creating a harmonious and persistent palate. Finesse and elegance are the distinctive features of this wine, which closes with a clean and refreshing finish.

Ideal as an aperitif or as an accompaniment to dishes based on fish, seafood and Mediterranean cuisine, "Mofete" is capable of elevating a wide range of foods, thanks to its extraordinary versatility and pairing ability.

With its Etna DOC Bianco "Mofete", Palmento Costanzo confirms its commitment to producing wines that express the complexity and uniqueness of the Etna territory, offering wine enthusiasts a tasting experience that is deeply rooted in the land of origin.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
