A wine from the northern area of New Zealand, Martinborough, in the Wairarapa region on the hills of Palliser Bay. The 100% Sauvignon Blanc grapes used come from the large Clouston vineyard, one of the company's longest-standing, and from the East Base vineyard, the most important and easternmost one characterized by heavier soils.
The winemaking takes place through soft pressing of the grapes, with alcoholic fermentation in stainless steel tanks at low temperatures for about a month, all to optimize the extraction of flavors. The wine remains in contact with the fine lees with repeated bâtonnage, to maximize its complexity.
A vegetal style with notes of pea and bell pepper leading the way, and passion fruit underneath. The palate has a balanced perception, with marked acidity and flavors more focused on fruit. An elegant and serious Sauvignon Blanc, well structured, with strong hints of tropical fruit and citrus.
A wine with a unique and refined flavor to pair with dishes based on white meats, fish and cheeses.
