The Mezcal Montelobos Tobalá Puebla 70cl represents a sublimation of Mexican traditional mechanics and craftsmanship. This spirit is produced through a completely natural and organic process, starting with the meticulous selection of the Tobalá agave, a rare and valuable variety grown on the mountain slopes of Puebla.
The Tobalá agave, known for its higher sugar content and smaller size compared to other varieties, is manually harvested when it reaches full maturity after about twelve years of growth. After harvesting, the plants are slowly cooked in underground stone-lined conical ovens, a traditional method that adds complexity and depth of aromas to this mezcal.
Distillation takes place in copper stills, and the Mezcal Montelobos Tobalá is then left to rest to refine its flavor, resulting in a clear liquor with silvery reflections. On the nose, it offers a complex bouquet with notes of dried fruit, cooked agave, and earthy and mineral nuances typical of the volcanic soil of Puebla.
On the palate, Mezcal Montelobos Tobalá has a full-bodied structure and a unique balance between sweetness and spiciness. Flavors of cooked agave blend with hints of vanilla, pepper, and a slightly smoky aftertaste, coming from the cooking of the agaves. The finish is long and lingering, with a clean end that invites another sip.
This mezcal is excellent both for pure tasting, to fully appreciate all its nuances, and as a base for sophisticated cocktails where it can add a touch of complexity and distinction.
