The Brut "36" by Casa Caterina is a sparkling wine that stands out for its long aging on the yeasts. In the vineyard, the objective is to obtain healthy fruit, as intact as possible, with always complete ripening. The base wines ferment spontaneously in steel and are subsequently assembled for refermentation in the bottle, following the classic method. It is almost undosed and contains no added sulphites.

It has a bright and quite intense straw yellow color. On the nose there are notes of lime, jasmine, citrus and tropical fruit, always maintaining elegance without falling into excess. The sip is full and versatile. An ideal wine to pair with practically any fish-based starter and first course.

Winery managed by the Del Bono family, which favors its own production standards.
Winery history
The estate is led by the Del Bono family, who have concentrated production at Casa Caterina in Monticelli Brusati. Commercial and trade sources report a longstanding family presence in the area and the brothers' commitment to continuing the winery and to a production approach independent of local appellation regulations.
Production philosophy
Low-intervention approach: cultivation without synthetic products, fermentations with indigenous yeasts, extended lees aging and manual disgorging practices. The winery favors its own rules and a production focused on the natural character of the fruit, declaring non-adherence to the Franciacorta DOCG regulations.
Terroir and vineyards
Monticelli Brusati. Vineyards are located between 260 and 310 m above sea level on soils mainly composed of limestone, clay and sand.
