This sparkling wine stands out as an extraordinary bubble, characterized by the peculiar philosophy of Casa Caterina. This company stands out as the only one in the region with an exclusive presence of vineyards cultivated with the Guyot and spurred cordon systems.

Production follows manual management of each phase of winemaking, with a traditional "à la volée" disgorgement. Each bottle is unique and hand-stamped with key dates, including harvest, draw and disgorgement, with an indication of the serial number in relation to the 6,000 total bottles produced.

The golden color and the fine and persistent perlage introduce a pleasantly intense bouquet, with notes of bread crust, buttery accents and slightly smoky tones. On the palate, the wine is round, with good flavor and excellent persistence.

Excellent in combination with seafood appetizers, it also goes well with stewed fish.

Artisanal producer of Traditional Method sparkling wines based in Monticelli Brusati (BS), focused on spontaneous fermentations, extended lees aging, and low-chemical viticultural practices.
Region: Lombardia
Country: Italia
Grapes: Chardonnay, Pinot Nero, Pinot Meunier
Production focused on the Traditional Method with extended aging on the lees. Spontaneous fermentations with indigenous yeasts and a minimal-intervention approach in the cellar. Vineyards in Monticelli Brusati on calcareous, clayey and sandy soils at 260–310 m above sea level. Manual disgorging "à la volée" and, in some cases, zero dosage. Winery managed by the Del Bono family, which favors its own production standards.
Winery history
The estate is led by the Del Bono family, who have concentrated production at Casa Caterina in Monticelli Brusati. Commercial and trade sources report a longstanding family presence in the area and the brothers' commitment to continuing the winery and to a production approach independent of local appellation regulations.
Production philosophy
Low-intervention approach: cultivation without synthetic products, fermentations with indigenous yeasts, extended lees aging and manual disgorging practices. The winery favors its own rules and a production focused on the natural character of the fruit, declaring non-adherence to the Franciacorta DOCG regulations.
Terroir and vineyards
Monticelli Brusati. Vineyards are located between 260 and 310 m above sea level on soils mainly composed of limestone, clay and sand.
