All of the maison's wines are presented as Aÿ Grand Cru. Style focused on Pinot Noir, with some cuvées blended at approximately 80% Pinot Noir and 20% Chardonnay. Hand selection of grapes, traditional pressing and hand riddling; multi-year aging on the lees for some cuvées.
Winery history
The estate has been associated with a family on the hills of Aÿ for centuries. The lineage cited on the maison’s website dates back to the marriage of Nicolas Le Cacheur and Françoise Remy in 1696, and the family has come to span twelve generations. In recent decades leadership passed through members such as Pierre Cheval, and today it is led by Louis Cheval.
