Cannonau di Sardegna - Su'Anima is a wine that embodies the art and tradition of Sardinian viticulture, with a harvest carried out manually in boxes, during mid-late September. The vinification begins with destemming and crushing, followed by fermentation in steel at a temperature of 25°C and maceration which lasts for seven days. The final pressing is carried out with the utmost delicacy, thus preserving the complexity and richness of the Nebbiolo grapes.

The wine refines its distinctive character through a maturation process in second passage barriques for 12 months, followed by a further 2 months of refinement in the bottle. This maturation period gives Su'Anima an extraordinary depth and complexity, highlighting the winery's mastery in balancing the flavors and characteristics of the terroir.

It has a ruby ​​red color enriched with orange reflections. On the nose, the inviting bouquet reveals notes of flowers and red fruits, with an enveloping finish of sweet resin. The palate is caressed by a pleasant freshness and good drinkability, accompanied by soft tannins and a floral character that give the wine an extraordinary balance.

This harmony of flavors makes Su'Anima an ideal companion for a wide range of dishes, from savory appetizers to first courses, as well as semi-mature cheeses. In every sip, Su'Anima reveals its ability to elevate the gastronomic experience, offering a sensorial journey through the richness of the Sardinian territory.

Winery history
The winery was born from the Pilloni family's return to the land. The family's agricultural activity dates back to the 1950s with Ernesto Pilloni. The modern winemaking project was launched by Salvatore Pilloni, and today the estate is run by his children, Valeria, Roberta and Nicola.
Production philosophy
The company prioritizes land protection and sustainability: precision farming, circular resource management, the use of renewable energy, and attention to biodiversity and the training of local youth.
Terroir and vineyards
