The Passito Bianco IGT "Le Passule" represents a splendid example of a sweet meditation wine, masterfully produced by the Librandi winery, a prominent name in the Calabrian wine scene. This wine is made using the traditional appassimento technique: the grapes are allowed to dry naturally in the sun to concentrate their sugars and aromas before fermentation.
Visually, "Le Passule" presents itself with an intense golden, almost amber, color, indicating the rich concentration achieved. On the nose, the bouquet is an enchanting interplay of aromas that evoke candied fruit, dried apricot, honey, and notes of sweet spices, very inviting and complex.
On the palate, the wine demonstrates an extraordinary harmony between sweetness and freshness. The sweetness is well-balanced by lively acidity that brings dynamism to the sip, while the finish is long and persistent, with a pleasant vein of minerality that invites another taste.
