Alla vista, si presenta di un bel colore rosato con riflessi ramati, esaltando una perlage fine e persistente che aggiunge una nota di vivacità al calice. Winery history
Founded by Edmond de Ayala in the 19th century, the house gained recognition for its low-dosage style and its presence in Great Britain. During the 20th century it changed ownership several times and, after a relaunch, was acquired by a group connected to Bollinger in 2005, with subsequent investments and modernisation of its facilities.
Production philosophy
In search of purity and balance: compositions centered on Chardonnay, low dosage and extended ageing on the lees. Work on single crus with micro-vinifications and the use of reserve wines to preserve continuity and finesse.
Terroir and vineyards
Works with a wide palette of Champagne crus, combining estate-grown grapes and fruit supplied by growers. Declared estate holdings include around 20 hectares distributed across the Montagne de Reims, the Côte des Blancs and other parcels in the Vallée de la Marne; the house is undergoing conversion toward more sustainable practices.
