This wine is the result of a particular and traditional winemaking practice of the region, known as "ripasso". This method consists of fermenting the Valpolicella wine a second time on the pomace residues left from the production of Amarone. This process gives the wine greater complexity, structure and aromatic depth, elevating its character and aging potential.

The care in the selection of the grapes, mainly Corvina, Rondinella and Molinara, and the careful control of each phase of production, from fermentation to the re-evaluation, up to the refinement in wooden barrels, are witnesses of Speri's commitment to respecting tradition while ensuring a high quality product. The refinement in wood enriches the wine with delicate aromatic nuances, contributing to the overall harmony of the bouquet and structure.

Visually, Speri's Valpolicella Ripasso Classico Superiore has an intense ruby ​​red color, capable of capturing attention and inviting tasting. On the nose, the wine expresses a rich and varied aromatic profile, with notes of cherries in alcohol, ripe fruit, sweet spices and a subtle hint of tobacco and chocolate, the result of the elegant passage in oak barrels.

Winery history
The Speri family has been present in Valpolicella for generations: the company's history dates back to the first half of the 19th century and developed over multiple generations into an established producer in Valpolicella Classica. Over the years the owners have expanded the vineyards in the most suitable areas and were among the first local producers to vinify an Amarone. Since the early 2000s the estate has moved toward organic farming, obtaining certification for 100% of production in 2015; more recently it has undertaken projects focused on sustainability and biodiversity.

Respect for the land, stylistic continuity and elegance are at the heart of its production approach: Speri prioritizes native grape varieties grown in its own vineyards, winemaking linked to individual crus, and agricultural practices focused on sustainability and the protection of biodiversity.
