The Classic Method by Pentaris, produced exclusively by the renowned Cascina Pastori Colombo, represents an excellent example of mastery in the production of high-quality sparkling wines. This sparkling wine is obtained by following the rigorous and traditional classic method, also known as the champenoise method, which means a second fermentation in the bottle.

The careful attention in selecting the grapes, all coming from the best vineyards of the estate, together with extended aging on the yeast, gives this sparkling wine a complexity and structure that are as admirable as they are delightful. The manual remuage process and subsequent disgorgement add further nuances of perfection to this beverage.

Visually, the Classic Method - Pentaris presents with a bright straw-yellow color, crossed by a very fine and persistent perlage that dances in the glass, inviting the first sip. On the nose, it offers an elegant and complex bouquet with notes of ripe white fruit, such as pears and apples, enriched by slight hints of yeast and toasted bread, which are the result of long aging on the yeasts.

In the mouth, the freshness is masterfully balanced by creaminess, with a palate that evokes ripe fruits again and adds accents of almond and minerality, ending with a long and pleasantly harmonious finish.

This sparkling wine is ideal to serve as an aperitif or to accompany refined fish dishes and seafood, offering an experience that elevates every occasion to an unforgettable moment.

Winery history
The project is linked to the Colombo family: the estate has been active in the Bubbio area since the early 2000s. Sources indicate that vineyard activity began around 2003/2004 with the purchase of Cascina Pastori; the work has focused on restoring historic vines and on showcasing Pinot Nero, alongside Chardonnay and Moscato. From the early 2010s the project has undertaken technical collaborations with winemaker Riccardo Cotarella for the wines' oenological development.
Production philosophy
The estate prioritizes careful, localized vineyard management, agronomic practices that respect the soil and landscape, and winemaking aimed at showcasing the terroir: meticulous vineyard care, limited production, and the use of the Traditional Method for sparkling wines.
Terroir and vineyards
Val Bormida, in the heart of the Alta Langa of Asti. Marl-limestone soils with marine-origin clays; reported elevations vary by source, but the cited vineyards lie at around 250–350 m above sea level, with an exposure favorable to Pinot Noir and Chardonnay.
