In the province of Benevento, in an uncontaminated place characterized by hills where the breeze from the land and the salinity of the sea arrive, Fiano is grown. The harvest is carried out in the first ten days of October; the vinification involves a soft pressing of the grapes, with fermentation in stainless steel at controlled temperature, aging in steel for 6 months and a further 4 months in the bottle before being put on the market.
When poured it appears of a straw yellow color with greenish reflections. The nose reveals citrus references and fruity hints of peach and apricot, accompanied by aromas of sage and rosemary and a note of mint. The sip is clearly sapid, with a decidedly fruity freshness, a broad taste, of medium persistence and a sweet almond finish.
It is recommended to combine it with first and second courses based on sea fish, shellfish and oily fish; it is also perfect with buffalo mozzarella and cherry tomatoes.
