The Etna DOC Bianco "Di Sei" wine by Palmento Costanzo is an elegant and refined expression of the native Sicilian vines, Carricante and Catarratto, grown on the slopes of Etna. This territory, unique in its kind for its volcanic soil rich in minerals and the particular microclimate, gives the wine a characteristic freshness and minerality. "Di Sei" by Palmento Costanzo is the result of meticulous attention to quality and tradition, combined with modern winemaking techniques that aim to enhance the unique character of the Etna terroir.

Winemaking takes place with the aim of preserving the delicate aromatic nuances and liveliness of the grapes. Fermentation takes place in stainless steel tanks at a controlled temperature, to maintain the freshness and purity of the fruit. This approach, together with a brief aging on the yeasts, enriches the wine with complexity while keeping its varietal qualities intact.

Visually, "Di Sei" presents itself with a light straw yellow color, symbol of its youth and freshness. On the nose, it offers a wide bouquet of aromas: notes of white pulp fruit, such as apple and pear, meet nuances of citrus and white flowers, with a background of minerality reminiscent of wet stone and salt, typical of Etna wines .

In the mouth, the wine reveals a balanced structure, characterized by a notable acidic freshness that integrates perfectly with the fruit flavors and mineral notes. The aromatic persistence is remarkable, with a clean and refreshing finish that invites another sip.

Etna DOC Bianco "Di Sei" is ideal as an aperitif or as an accompaniment to fish dishes, light appetizers and fresh cheeses. Its acidity and minerality make it particularly suitable for pairing with foods with a delicate or slightly savory flavour, enhancing the flavors without overpowering them.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
