Winery history Cherubini

The project is led by winemaker Mattia Corbellini, who moved the operation to the farmhouse he purchased and manages it with hands-on methods and artisanal care. The published description mentions the purchase of the farmhouse in 2011, vineyards with old plantings and a small cellar with a few barrels/barriques used for ageing.

Production philosophy

Low-intervention practices both in the vineyard and in the cellar: fermentations with indigenous yeasts, limited use of sulfites when necessary, aging in concrete and barrique, and bottling using the Traditional Method often at zero dosage. The approach aims to express the terroir in a natural, unforced way.

Terroir and vineyards

The winery is located in a hilly valley in the Brescia hills, close to a nature reserve on the eastern edge of the Franciacorta area. The soils are described as rich in limestone with a clay subsoil, conditions that impart minerality and freshness to the wines.
